Ingredients:
- Sweet Corn: 3tbsp
- Capsicum: 1 big
- Carrot: 1 big
- Beans: 4
- Onion: 1 medium (cut lengthwise)
- Ginger paste: 1tsp
- Garlic paste: 1tsp
- oil: 2tbsp
- Ghee: 1tsp
- Cashew Nuts: 5-6
- Mint leaves: 10-15
- Coriander leaves: 1/2 handful
- Gram masala: 2tbsp
- Cardamom: 4
- Cinnamon: 4
- Clove: 4
- Bay leaf: 4
- Green Chilly : 4-5
- Rice: 1glass
- Water: 2glass
- Salt: to taste
Method:
- Cut all vegetables cross & lengthy style.
- Put oil in a pressure cooker.
- Add Cardamom, Cinnamon, clove & bay leaves fry for 5-10 minutes.
- Add onion fry till it gets golden brown.
- Add green chilly fry
- Add carrot & beans salt-1tsp, fry for 5min.
- Add capsicum fry.
- Add sweet corn, fry for 10 min.
- Add ghee, gram masala, ginger-garlic paste & fry for 1-2 minutes.
- Add rice grains & fry for 2min.
- Add mint & coriander leaf stir.
- Add water mix well & add salt.
- Put the lid of the pressure cooker, whistle it 3times with full flame.
- Let the cooker cool by itself.
- It can be served with any gravy, raita or with tomato checkup.
Note: If you don't have sweet corn you can make it vegetable rice.
